Roast Chicken (Chicken)

1 whole chicken
1 c soy sauce
1/4 lemon juice
dash of pepper

2 tomatoes, chopped
1 onion, chopped
salt and pepper

1/2 stick butter, cut into cubes

1 oven bag (may be purchased at any supermarket)
3 Tbsp flour
Marinate chicken in soy sauce, lemon juice and dash of pepper for at least 24 hours, turning chicken occasionally.

Heat oven to 350 degrees.

Remove chicken from marinade. Combine chopped tomatoes and onions and season lightly with salt and pepper and stuff chicken.

Place chicken in oven bag, following instructions, and add cubes of butter in cavity and around chicken. Tie oven bag, slit hole(s) and place in baking pan. Roast for 1 hour and 20 minutes (or according to oven bag instructions).

When done, slowly remove chicken from bag, saving drippings and stuffing. Slice and serve hot with stuffing and drippings on the side. Serve with rice or mashed sweet potatoes.
